Biography:

Winston J. Craig is Professor of Nutrition and Director of the dietetics internship program at Andrews University in Berrien Springs, Michigan, where he has taught health and nutrition classes since 1987.  Dr Craig received his Ph.D. degree in Organic Chemistry (in the field of terpenoid chemistry) from the University of Queensland in Brisbane, Australia and a Master of Public Health degree in Nutrition from Loma Linda University, California.  He is a registered dietitian since 1983 and holds membership in the American College of Nutrition, the American Society for Nutritional Sciences, the American Dietetic Association and Sigma Xi. 

Dr. Craig has taught nutrition courses for the past 28 years including 17 years for ADA approved/accredited dietetic programs.  He taught nutrition at Loma Linda University, California and at the University of Massachusetts in Amherst.  He has authored over 100 articles for scholarly journals and lay publications.  He is a regular contributor to Herb Watch in Vibrant Life Magazine and has written five chapters for different nutrition books.  Books he has written himself include Nutrition for the Nineties, The Use and Safety of Commonly Used Herbs and Herbal Teas, Nutrition and Wellness: A Vegetarian Way to Better Health, and Eating for Good Health.  He is also an assistant editor of the Journal of Health and Healing and the assistant editor of the Vegetarian Nutrition Dietetics Practice Group newsletter Vegetarian Nutrition Update.

Dr. Craig has conducted nutrition seminars in North America, Australia and New Zealand, Europe, and the Caribbean.  His research interests include the impact of phytochemicals on one's health, the role of diet in cardiovascular disease, and herbal remedies.  His hobbies include wildlife and wildflower photography, travel, hiking, birding and backpacking.
