Position summary
The Baker is a highly specialized role in Dining Services that requires vast knowledge of bakery operations and culinary skills. The position works closely with the Executive Chef and Sous Chef to build production sheets to meet the needs of the Terrace Café, Gazebo, Catering, and offsite bakery clients. The individual is required to create and produce menus for the bakery and forecast the contribution of the bakery to the overall revenues of Dining Services.

Duties and responsibilities
- Create bakery recipes that work within the parameters of the Terrace Café and Catering menus dictated by the Executive Chef and the Sous Chef /The Gazebo menu dictated by the Retail Manager. Bake, from scratch, products on a daily basis that meet the Bon Appetit cooking standards.
- Create and maintain a working menu that constantly changes and evolves to meet the needs of other areas of every program in Dining Services
- Create and maintain the menu for the “Whisk” program and ensure production levels are adequate to meet the needs of our offsite bakery clients, currently $25K+/year.
- Create forecast and production sheets, maintain inventory, and provide product orders to the Executive Chef.
- Communicate and orchestrate the functions of the bakery to ensure the highest quality experience. Including the management of full time and student staff.
- Supervise and execute complete shifts/ days of operation in the Terrace Café without direct oversight from the Sous or Executive Chefs.
- Work with the highest level of efficiency and drive the team around you to perform on a high level of productivity.
- Ensure that all local, state, and federal health code laws are followed and train direct staff to follow these guidelines.
- Communicate clearly with other departments to ensure product availability for forecasted menu.
- Contribute to the success of the department and be willing to work alongside other programs to ensure success.
- Does other work as requested by supervisor.
- Cooperate with supervisor in adjusting job duties as circumstances require.
Supervisory responsibilities
The Baker supervises the bakery staff and needed prep or expo cooks to execute job functions.
Qualifications
EDUCATION and/or EXPERIENCE
A degree in Pastry Chef or a related field; and /or at least five years related experience and/or training; or equivalent combination of education and experience. Computer literacy skills are required
LANGUAGE SKILLS
Must be able to read, write and speak English fluently. Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively to customers or employees of organization
MATHEMATICAL SKILLS
Ability to calculate figures and amounts such as discounts, interest, and percentages. Ability to apply concepts of basic algebra and geometry. Comfort with accounting procedures.
REASONING ABILITY
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
CERTIFICATION, LICENSES, REGISTRATION
Serve safe or equivalent certification.
Must be a Seventh-day Adventist in good and regular standing.
