Hash Brown Potatoes 2-3 potatoes 1 onion 2 T olive oil ? onion powder ? garlic powder ? red pepper powder ? curry powder ? Daiya or VioLife vegan cheese I scrub the potatoes without pealing them and chop the onion. I cover the bottom of a frying pan with olive oil (2 T?) I then shred 1 to 1 1/2 potatoes into the frying pan and spread out the potatoes. Then spread out the onions over the potatoes and season with onion powerder, garlic powder, (sometimes curry powder), and red pwpper powder. Then sprinkle the vegan cheese over the top. I then shred the remain potato(s) over that and cover and fry with low heat so it cooks without burning it. After it is crispy on the bottom, I flip it over to get crispy on the other side. when it is done, I have crispy, crunchy potatoes on both sides and melted cheese and onion in the middle and just enough red pepper and curry that I don't notice the lack of salt. I use a Presto Professional Salid Shooter to shred the potatoes or slice them for scalloped potatoes.
