Wait until manicotti is limp. Put the manicotti on a cutting board and spoon on a layer of ricotta cheese and a layer of sauted veggies and role it up. Add tomato sauce and veggie cheese on top. Repeat process until you run out of ricotta and veggies. I put 2 or 3 in a single serving container and freeze them. I bake them @350 for 30 minutes along with regular lasangga.
