Biography

Lee Crosby is a registered dietitian specializing in plant-based nutrition for chronic disease prevention and management, as well as overall wellness. She has worked in the nonprofit space doing clinical practice, clinical research, public education, and media outreach promoting plant-based nutrition for health. Ms. Crosby also has a special interest in women’s health and served as a former chair of the Women’s Health
Dietetic Practice Group within the Academy of Nutrition and Dietetics. She currently teaches as adjunct faculty at Andrews University.
